Description
This version of the popular Sock it to Me Cake is made from scratch. It consists of a rich yellow cake baked in a tube pan with a streak of cinnamon, brown sugar and pecans in the center.
Ingredients
- 3 cups all-purpose flour
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup butter
- 2 cups white sugar
- 6 eggs
- 1 (8 ounce) container sour cream
- 1 teaspoon vanilla extract
- 3 tablespoons ground cinnamon
- 3 tablespoons brown sugar
- ½ cup chopped pecans
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. Sift together the flour
- baking soda and salt. Set aside.
- In a large bowl
- cream together the butter and white sugar until light and fluffy. Beat in the eggs one at a time
- then stir in the sour cream and vanilla. Beat in the flour mixture until well blended. Pour batter into prepared pan.
- Pour half of batter into prepared tube pan. Sprinkle with cinnamon
- brown sugar and nuts. Pour in remaining batter.
- Bake in the preheated oven for 90 minutes
- or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes
- then turn out onto a wire rack and cool completely.
