Quinoa with Sweet Potatoes and Broccoli

Description

The flavors of the broccoli and sweet potatoes compliment each other wonderfully in this recipe! I wasn’t sure if steaming the sweet potatoes was necessary or not. It might be okay to skip that step. However, I wasn’t sure if they would get tender enough by just cooking them in oil, so I went ahead and did it and it turned out great!

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 large sweet potato, peeled and cut into 1/4-inch cubes
  • 2 tablespoons canola oil
  • 1 onion, chopped
  • 2 cups frozen chopped broccoli, thawed
  • 1 tablespoon garlic powder
  • ½ cup whole almonds
  • 1 tablespoon soy sauce, or to taste (Optional)

Prep Time: 10 mins

Cook Time: 20 mins

Total Time: 30 mins

Servings: 5
