Pineapple Salsa

Description

A fruit and vegetable salsa! Serve over chicken, fish, or pork, or as a side dish.

Ingredients

  • 1 cup finely chopped fresh pineapple
  • ½ cup diced red bell pepper
  • ½ cup diced green bell pepper
  • 1 cup frozen corn kernels, thawed
  • 1 (15 ounce) can black beans, drained and rinsed
  • ¼ cup chopped onions
  • 2 green chile peppers, chopped
  • ¼ cup orange juice
  • ¼ cup chopped fresh cilantro
  • ½ teaspoon ground cumin
  • salt and pepper to taste

Instructions

  1. In a large bowl
  2. toss together pineapple
  3. red bell pepper
  4. green bell pepper
  5. corn
  6. black beans
  7. onions
  8. green chile peppers
  9. orange juice
  10. and cilantro. Season with cumin
  11. salt
  12. and pepper. Cover
  13. and chill in the refrigerator until serving.
