Hollandaise Sauce

Description

This creamy lemon sauce is a standard. Make it just before serving.

Ingredients

  • 3 egg yolks
  • 1 ½ tablespoons fresh lemon juice
  • 4 tablespoons unsalted butter, chilled
  • ¾ cup unsalted butter, melted
  • salt to taste
  • 1 teaspoon ground white pepper

Instructions

  1. Place egg yolks into a small saucepan; whisk until lemon yellow and slightly thick
  2. about 1 minute. Whisk in lemon juice until combined.
  3. Add 2 tablespoons cold butter to egg mixture
  4. then place the pan over very low heat. Whisk constantly while butter melts; continue whisking until mixture is thick enough to see the bottom of the pan between strokes. Remove the pan from heat. Whisk in remaining cold butter
  5. 1 tablespoon at a time
  6. until incorporated.
  7. Whisk in melted butter a little bit at a time. Season with salt and white pepper.
