Hearty Hamburger Soup

Description

A stick to your ribs thick and hearty soup, filling and very good. Easy and quick to make. A family favorite in our house! Serve with fresh biscuits.

Ingredients

  • 1 ½ pounds ground beef
  • 1 onion, minced
  • 4 carrots, minced
  • 3 celery ribs, thinly sliced
  • ½ cup barley
  • 1 (28 ounce) can diced tomatoes
  • 2 cups water
  • 3 (10 ounce) cans beef broth
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 bay leaf
  • 1 tablespoon parsley
  • 1 teaspoon minced garlic
  • ½ teaspoon dried thyme
  • ground black pepper, to taste

Instructions

  1. Heat a large soup pot over medium-high heat
  2. and crumble in ground beef. Cook and stir until beef is evenly browned and no longer pink. Drain and discard any excess grease.
  3. Stir in onion
  4. carrots
  5. celery
  6. and barley. Pour in beef broth
  7. diced tomatoes
  8. water
  9. and condensed soup. Season with bay leaf
  10. parsley
  11. garlic
  12. thyme
  13. and pepper. Bring to a boil then reduce the heat and cover.
  14. Simmer for 2 hours
  15. stirring frequently. Remove bay leaf before serving.
