Hamburger Soup with Cabbage

Description

A hearty tomato-based hamburger soup made with ground beef, fresh cabbage, and other fresh vegetables.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound lean ground beef
  • 2 medium onions, chopped
  • 1 medium head cabbage, chopped
  • 4 medium carrots, chopped
  • 4 stalks celery, chopped
  • 8 cups water
  • 2 (14 ounce) cans diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 4 cubes beef bouillon
  • 1 (2.4 ounce) package vegetable soup mix
  • 2 teaspoons brown sugar
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons Italian seasoning, or more to taste
  • ½ teaspoon garlic powder
  • 1 splash red wine
  • salt and ground black pepper to taste

Instructions

  1. Heat oil in a large skillet over medium-high heat. Cook and stir ground beef and onions in the hot skillet until beef is browned and crumbly and onions are translucent
  2. 5 to 7 minutes.
  3. Add cabbage
  4. carrots
  5. and celery. Cover and cook
  6. stirring often
  7. until tender
  8. about 10 minutes. Add water
  9. diced tomatoes
  10. tomato paste
  11. bouillon
  12. soup mix
  13. brown sugar
  14. Worcestershire sauce
  15. Italian seasoning
  16. garlic powder
  17. red wine
  18. salt
  19. and pepper. Bring to a boil.
  20. Reduce heat and simmer
  21. uncovered
  22. until flavors are mixed and cabbage is tender
  23. about 1 hour.
