I came up with this recipe the same way I think a lot of cooks come up with new ideas – by sticking my head in the refrigerator and wondering what I could throw together with what I had. It turned out to be easy and very tasty so I thought I would share.
Ingredients
- 6 slices bacon
- ¼ cup red wine vinegar
- ¼ cup seasoned rice vinegar
- 1 (2 ounce) can anchovy fillets (such as King Oscar®), diced (Optional)
- ½ teaspoon ground white pepper
- 2 tablespoons extra-virgin olive oil
- 1 yellow onion, thinly sliced
- 2 cloves garlic, minced
- 12 ounces baby spinach (such as Dole®)
- 4 hard-boiled eggs, peeled and sliced
- ½ cup green onions, finely chopped
- ¼ cup grated Asiago cheese
