Easy Egg Drop Soup

This is great on a dreary day, or when your feeling a little under the weather

Ingredients

  • 1 (49.5 fluid ounce) can chicken broth
  • 1 bunch chopped green onions
  • ¼ teaspoon white sugar
  • 2 tablespoons soy sauce
  • 3 tablespoons cornstarch
  • ⅓ cup cold water
  • 3 eggs
  • 2 tablespoons cold water

Instructions

  1. Heat chicken broth in a large pot over medium-high heat; stir in green onions.
  2. Mix 1/3 cup of cold water
  3. cornstarch
  4. soy sauce
  5. and sugar in a bowl until smooth; stir into broth. Bring to a boil and simmer for 1 minute; reduce heat to medium-low.
  6. Whisk eggs and 2 tablespoons of cold water together in a small bowl with a fork. Drizzle egg
  7. a little at a time
  8. from the fork into hot broth. Remove soup from heat and serve.
