Creamy Potato Sausage Soup

Description

A not-too-rich cream soup using quickly prepared ingredients. Serve with crusty French bread for dipping!

Ingredients

  • 2 tablespoons olive oil
  • 2 small onions, finely chopped
  • 1 pound smoked sausage, cut into half moons
  • 1 pound kielbasa sausage, cut into half moons
  • 1 (20 ounce) package shredded hash brown potatoes (such as Simply Potatoes®)
  • 2 cups water, or as needed
  • 2 bay leaves
  • ¼ cup all-purpose flour
  • ¼ cup butter
  • 2 cups milk
  • 1 pinch salt
