Cilantro Lime Quinoa

Description

This is a delicious quinoa recipes that uses all the flavors of summer. It can be served warm or cold and is great on its own as a vegetarian dish or as a picnic side item.

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • ½ red onion, diced
  • 1 jalapeno pepper, diced
  • ¼ teaspoon salt
  • 1 cup quinoa, rinsed and drained
  • 1 ½ cups low-sodium chicken broth
  • 1 cup corn (Optional)
  • 1 mango, peeled and diced
  • 1 avocado – peeled, pitted, and diced
  • 1 ½ tablespoons lime juice
  • 2 tablespoons chopped fresh cilantro
