Ingredients

  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 2 small green bell peppers, cut into bite-size pieces
  • 1 cucumber – peeled, seeded, and cut into bite-size pieces
  • 2 cups chopped red cabbage
  • 1 ½ cups roughly chopped radishes
  • ¼ cup extra-virgin olive oil
  • ¼ cup fresh lemon juice
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 (8 ounce) package feta cheese, cut into small cubes
  • ¼ cup chopped flat-leaf parsley
