Bacon Cheese Muffins

Description

A great dinner or wonderful for breakfast with eggs.

Ingredients

  • 1 pound bacon
  • 4 cups all-purpose flour
  • 2 cups shredded Cheddar cheese
  • 2 tablespoons baking powder
  • 1 teaspoon garlic salt
  • ½ teaspoon ground black pepper
  • 2 eggs
  • 2 cups milk
  • ½ cup vegetable oil

Instructions

  1. Cook bacon in a large skillet over medium-high heat until crisp
  2. about 10 minutes. Drain the bacon slices on paper towels and crumble once cooled.
  3. Preheat oven to 400 degrees F (200 degrees C). Coat 24 muffin cups with cooking spray.
  4. Mix flour
  5. Cheddar cheese
  6. baking powder
  7. garlic salt
  8. and black pepper together in a large bowl.
  9. Beat eggs
  10. milk
  11. and vegetable oil together in a small bowl; stir into flour mixture just until moistened. Gently fold bacon through the batter. Spoon batter into prepared muffin cups.
  12. Bake in the preheated oven until a toothpick inserted into the center comes out clean
  13. 15 to 20 minutes. Serve warm.
