Description
This plum cake uses wholesome ingredients for very tasty results!
Ingredients
- 2 ½ cups whole wheat pastry flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 1 pinch nutmeg
- 2 medium apples, peeled and sliced
- 2 plums, peeled and sliced
- 2 teaspoons butter, melted
- 1 cup white sugar
- ½ cup applesauce
- ⅓ cup orange juice
- ¼ cup oil
- 2 eggs, lightly beaten
- 2 teaspoons minced fresh ginger
- 2 teaspoons vanilla extract
- 3 tablespoons white sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking pan.
- Sift together flour
- baking powder
- baking soda
- cinnamon
- salt
- and nutmeg into a large bowl. Toss 1/2 of the apples and 1/2 of the plums into the flour mixture. Place remaining apples and plums in a second bowl and toss with melted butter.
- Mix together sugar
- applesauce
- orange juice
- oil
- eggs
- ginger
- and vanilla extract in a third bowl. Mix together sugar and cinnamon in a small
- fourth bowl.
- Fold applesauce mixture into the flour mixture until just moistened. Pour 1/2 of the batter into the prepared baking pan and layer with apples and plums. Pour remaining batter on top and sprinkle with cinnamon-sugar mixture.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean
- about 50 minutes.
