Apple-Plum Cake

Description

This plum cake uses wholesome ingredients for very tasty results!

Ingredients

  • 2 ½ cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 pinch nutmeg
  • 2 medium apples, peeled and sliced
  • 2 plums, peeled and sliced
  • 2 teaspoons butter, melted
  • 1 cup white sugar
  • ½ cup applesauce
  • ⅓ cup orange juice
  • ¼ cup oil
  • 2 eggs, lightly beaten
  • 2 teaspoons minced fresh ginger
  • 2 teaspoons vanilla extract
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking pan.
  2. Sift together flour

  7. and nutmeg into a large bowl. Toss 1/2 of the apples and 1/2 of the plums into the flour mixture. Place remaining apples and plums in a second bowl and toss with melted butter.
  8. Mix together sugar
  9. applesauce
  10. orange juice
  11. oil
  12. eggs
  13. ginger
  14. and vanilla extract in a third bowl. Mix together sugar and cinnamon in a small
  15. fourth bowl.
  16. Fold applesauce mixture into the flour mixture until just moistened. Pour 1/2 of the batter into the prepared baking pan and layer with apples and plums. Pour remaining batter on top and sprinkle with cinnamon-sugar mixture.
  17. Bake in the preheated oven until a toothpick inserted into the center comes out clean
  18. about 50 minutes.
