Looking for something to do with leftover corned beef? This crispy corned beef hash is made from start to finish in the air fryer.
Ingredients
- 1 pound red potatoes, cubed
- ½ cup chopped green bell pepper
- ½ cup chopped onion
- 2 teaspoons vegetable oil
- ½ teaspoon paprika
- salt and ground black pepper to taste
- 1 cup cubed leftover corned beef
- 2 eggs
Instructions
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Combine potatoes
- bell pepper
- and onion in a large bowl. Add vegetable oil
- paprika
- salt
- and pepper. Stir until potatoes are evenly coated. Transfer mixture to the basket of the air fryer.
- Cook for 10 minutes. Shake and cook 5 for minutes more. Stir in the corned beef and cook for 5 minutes.
- Make 2 small wells in the mixture. Crack 1 egg into each well. Cook until eggs are set and cooked to desired doneness
- about 3 minutes.
