Slow Cooker Potato Soup

Description

Excellent soup for cold nights; goes very well with cornbread.

Ingredients

  • 8 pounds potatoes, peeled and cubed
  • 1 small onion, chopped
  • 2 tablespoons butter
  • 2 cubes chicken bouillon
  • 2 tablespoons dried parsley
  • 6 cups water
  • 2 cups milk
  • ½ cup all-purpose flour

Instructions

  1. Place potatoes
  2. onion
  3. butter
  4. chicken bouillon cubes
  5. parsley
  6. and water into a slow cooker. Set on Low and let cook for 6 to 8 hours.
  7. At least 1/2 an hour before serving
  8. stir together milk and flour until no lumps remain
  9. and mix into the soup. Cook for 30 minutes or until the soup is thickened.

Prep Time: 10 mins

Cook Time: 7 hrs 40 mins

Total Time: 8 hrs
