Southwestern Roasted Corn Salad

Description

Corn has never tasted so good! This is a perfect side dish for a BBQ and tastes great on a hot summer day.

Ingredients

  • 8 ears fresh corn in husks
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 red onion, chopped
  • 1 cup chopped fresh cilantro
  • ½ cup olive oil
  • 4 cloves garlic, peeled and minced
  • 3 limes, juiced
  • 1 teaspoon white sugar
  • salt and pepper to taste
  • 1 tablespoon hot sauce

Instructions

  1. Place the corn in a large pot with enough water to cover
  2. and soak at least 15 minutes.
  3. Preheat grill for high heat. Remove silks from corn
  4. but leave the husks.
  5. Place corn on the preheated grill. Cook
  6. turning occasionally
  7. 20 minutes
  8. or until tender. Remove from heat
  9. cool slightly
  10. and discard husks.
  11. Cut the corn kernels from the cob
  12. and place in a medium bowl. Mix in the red bell pepper
  13. green bell pepper
  14. and red onion.
  15. In a blender or food processor
  16. mix the cilantro
  17. olive oil
  18. garlic
  19. lime juice
  20. sugar
  21. salt
  22. pepper
  23. and hot sauce. Blend until smooth
  24. and stir into the corn salad.
