Cucumbers in Sour Cream

Description

This is a yummy side dish that we always have on Thanksgiving but it’s great in the summer as well. The mixture will be soupy; it’s supposed to be that way.

Ingredients

  • 2 cucumbers, thinly sliced
  • 1 (8 ounce) container sour cream
  • ¼ cup distilled white vinegar
  • ⅓ cup white sugar
  • salt and ground black pepper to taste

Instructions

  1. Place cucumber slices in a container and cover with cold water. Refrigerate 4 hours to overnight.
  2. Whisk sour cream
  3. sugar
  4. vinegar
  5. and salt in a large mixing bowl until sugar has dissolved.
  6. Drain cucumbers and squeeze out excess water. Add cucumbers to sour cream dressing and toss to coat.
