Yogurt-Marinated Grilled Chicken

Description

This easy, fresh-tasting yogurt marinade helps the chicken stay juicy even if it gets a little overcooked.

Ingredients

  • 1 cup full-fat plain Greek yogurt
  • 1 cup lightly packed chopped cilantro
  • 2 tablespoons lemon juice
  • 1 tablespoon jarred minced garlic
  • 2 teaspoons kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground black pepper
  • 3 ½ pounds chicken thighs

Instructions

  1. Mix Greek yogurt
  2. cilantro
  3. lemon juice
  4. garlic
  5. salt
  6. cumin
  7. cayenne
  8. and pepper together in a large bowl. Place chicken thighs in a large resealable plastic bag; cover with yogurt mixture.
  9. Let chicken marinate in the refrigerator
  10. 3 to 8 hours.
  11. Bring chicken to room temperature
  12. about 30 minutes. Pour off marinade.
  13. Preheat grill for medium heat and lightly oil the grate. Grill chicken
  14. turning occasionally
  15. until grill marks form
  16. about 5 minutes per side.
