Pineapple Cake II

Description

Very moist cake that is very good for a pot luck dinner.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 ½ cups white sugar
  • ½ teaspoon salt
  • 1 (20 ounce) can crushed pineapple with juice
  • ¾ cup butter
  • ½ cup white sugar
  • ½ cup evaporated milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×13-inch baking pan.
  2. Mix flour
  3. 1 1/2 cups sugar
  4. baking soda
  5. and salt together in a mixing bowl. Stir in undrained pineapple and eggs until well combined. Pour batter into the prepared pan.
  6. Bake in the preheated oven until a toothpick inserted in the center comes out clean
  7. about 30 minutes.
  8. Meanwhile
  9. combine butter
  10. evaporated milk
  11. remaining 1/2 cup sugar
  12. and vanilla in a saucepan over medium-high heat. Bring to a boil and cook for 5 minutes.
  13. Remove cake from the oven and set on a wire rack.
  14. Pour butter mixture over warm cake. Let cool for 30 minutes before serving.
